Austin’s sushi lovers have a new destination to explore, as Aburi Oshi Sushi makes its grand debut in central Austin. Renowned for its signature flame-seared sushi and oshi-style pressed sushi, Aburi Oshi is the latest concept by Aburi Restaurants, a culinary powerhouse behind Canada’s first MICHELIN-starred sushi restaurant, Aburi Hana.

Starting September 20, sushi enthusiasts can indulge in Aburi Oshi’s innovative and high-quality offerings at Cloud Kitchens, located at 5610 N Interstate Hwy 35. This to-go concept offers a curated menu designed for pickup, delivery, and catering, bringing the same world-class ingredients and artistry that have earned Aburi Restaurants global acclaim.

A Taste of Aburi’s Signature Sushi in Austin

Aburi Oshi Sushi is renowned for its flame-seared sushi—a technique that marries traditional Japanese pressed sushi (oshi sushi) with proprietary sauces and flame-searing. Among the fan favorites is the Aburi Salmon Oshi, featuring Sockeye salmon, Miku sauce (a family recipe), jalapeño, and black pepper. For its Austin debut, Aburi Oshi has crafted a special addition to the menu: the Aburi Yellowtail Oshi, inspired by Mexican flavors and featuring yellowtail, cilantro, fresh avocado sauce, and serrano pepper.

“We are honored to introduce our flame-seared style of sushi to Austin, and to add to the vibrant food scene here,” says Kazuki Uchigoshi, Aburi’s Corporate Chef. “Our expansion outside of Canada marks a significant milestone for us, and we’re thrilled to be a part of the Austin and overall Texas dining community.”

From Japan to Canada, and Now Texas

Aburi Oshi’s roots go back to Japan, where founder Seigo Nakamura revolutionized the sushi scene with his creation of flame-seared sushi. After taking over his family’s restaurant in Miyazaki, Nakamura sought to innovate, creating sushi that combined traditional Japanese techniques with modern flavors. His Aburi Salmon Oshi Sushi became a fan-favorite and led to the founding of Aburi Restaurants, which operates nine properties in Vancouver and Toronto, as well as two restaurants in Tokyo.

Now, with the opening of the Austin to-go concept, Aburi Oshi is set to enrich Austin’s culinary landscape with its unique blend of artistry, quality, and innovation.
