One of Austin’s most refined dining rooms is about to host a rare night that sits right at the intersection of precision, fire, and liquid art.
On Thursday, February 26, Hestia, the Michelin starred restaurant from Emmer & Rye Hospitality Group, will host an intimate sake dinner with Richard Geoffroy, Founder and Maker of IWA Sake and former Chef de Cave of Dom Pérignon.
This one night experience marks the United States debut of IWA Assemblage 6 from the 2024 vintage, an ultra premium sake shaped by Geoffroy’s philosophy of assemblage. Built around balance, structure, and intention, IWA approaches sake with the mindset of a winemaker while remaining deeply grounded in Japanese tradition. The result is a sake designed to move effortlessly across cuisines and speak to both sake devotees and wine lovers alike.
A Six Course Live Fire Tasting Experience
Hestia’s chef team has curated a six course tasting menu designed specifically around IWA’s vintage based sakes. The pairings are built to complement Hestia’s signature live fire driven cooking, allowing each sake to evolve naturally as the evening progresses.
In addition to the debut of Assemblage 6, guests will taste select earlier IWA releases alongside the highly anticipated IWA Reserves. The Reserves are an aged sake expression available only in limited global markets, making this tasting especially rare for Austin diners.
Communal Seating With Guided Tasting
Seating for the evening will be communal, encouraging shared discovery and conversation throughout the meal. Richard Geoffroy will personally guide guests through each expression, offering insight into the creative philosophy, blending decisions, and intent behind every pour.
This is less about a traditional pairing dinner and more about understanding how structure, texture, and restraint can translate across both food and drink.
