Paris Baguette Georgetown is officially open, giving Williamson County another option for pastries, cakes, fresh bread and coffee that does not involve pretending a grocery store muffin counts as breakfast.
The new café opened August 14 at 1314 W. University Ave. and is owned by Saige and David Lee. It marks the 28th Paris Baguette location in Texas as the international bakery brand continues expanding across North America.
For David Lee, the opening is more personal than the average franchise launch. He spent years working in corporate retail operations before deciding to pursue business ownership, but his connection to Paris Baguette goes back more than two decades. Lee says the brand had already been part of his regular routine through coffee stops, twisted donuts and family celebrations long before he considered opening one himself.
That history gives the Georgetown café a little more context than the usual chain expansion story. Lee is positioning the location as a neighborhood gathering place, not simply a counter for grabbing a pastry on the way to somewhere else.
The menu follows the familiar Paris Baguette formula with artisan pastries, cakes, breads and handcrafted coffee drinks. The company describes its cafés as French inspired neighborhood bakeries, with an emphasis on polished presentation, baked goods suited for both everyday cravings and special occasions, and a café experience built around lingering for a bit rather than racing through the transaction.
Georgetown also represents another step in a much larger growth plan. Paris Baguette currently operates more than 300 bakery cafés across North America and says it plans to reach 1,000 locations in the United States and Canada by 2030.
For Georgetown residents, however, the more immediate development is simpler: there is now another place in town to grab a pastry, meet over coffee or pick up a cake when showing up empty handed is not going to cut it.
