Downtown New Braunfels is getting a new reason to dress up for dinner. On Tuesday, February 17, 2026, Old City Hall Restaurant & Bar officially opens inside a building that once handled city business and will now handle martinis, steaks, and nights that turn into standing reservations.

The name is not branding poetry. It is literal. Old City Hall occupies the former New Braunfels city hall, a nearly century old structure that has been thoughtfully restored by Wiggins Hospitality Group, the team behind McAdoo’s Seafood Company and La Cosecha Mexican Table. Instead of sanding off the building’s history, the group leaned into it, giving the space a sense of permanence that feels rare in a dining landscape addicted to reinvention.

The menu is built around timeless American classics with just enough polish to remind you this is a night out, not a pit stop. Familiar dishes show up sharpened and confident. Texas Beef Tartare, known locally as parisa, features finely chopped beef tenderloin with white cheddar, shallots, pickled jalapeno, and mustard seeds, served the way it should be, with saltine crackers. A Little Gem Caesar keeps things clean and balanced, while pigs in a blanket arrive elevated, using smoked beef sausages wrapped in puff pastry with honey Dijon aioli and black garlic ketchup.

Pastas and steaks form the backbone of the menu. Spicy vodka rigatoni comes loaded with Italian sausage and topped with burrata. A peppercorn filet mignon pairs with tempura battered onion rings and a creamy au poivre sauce that does not overstay its welcome. Steak frites sticks to tradition with hanger steak, skinny fries, and a house herb and bourbon sauce. The Mayor’s Cheeseburger goes full classic, stacking double beef patties with American cheese, house pickles, caramelized onion, and bearnaise aioli.

The bar program keeps things simple and sharp. Expect ice cold martinis, negronis, frozen gin and tonics, and other classics executed without theater.

Old City Hall seats approximately 200 guests with private dining spaces available. Dinner service begins February 17, with reservations opening February 9 via OpenTable. Hours run Sunday through Thursday from 4 pm to 9 pm, and Friday and Saturday from 4 pm to 10 pm.
