After years of building a following through pop ups, private events, and major festivals across Austin, Austin Oyster Co. is officially opening its first brick and mortar oyster bar on March 31 at 2502 East Cesar Chavez Street.

Founded in 2020 as a backyard oyster experience during the pandemic, the concept quickly grew into a go-to raw bar for events like ACL, Luck Reunion, and F1 race weekends. Now, the team is bringing that same energy into a full restaurant with an expanded menu and a permanent home.

Founder Brendan Yancy partnered with Drew Ahumada to develop the space, with Chef de Cuisine Clark Costello leading the kitchen and Kait Fleming overseeing the beverage program. The goal stays simple: high quality seafood sourced through long standing relationships with East Coast suppliers, served in a way that feels accessible in Austin.

Raw Bar Focus With a Full Menu

The raw bar anchors the experience with a rotating selection of oysters, including Lone Pine Pearls sourced from the company’s own farm in Brunswick, Maine when available.

The menu expands beyond oysters with tuna tartare, shrimp cocktail, dressed clams, Maine mussels, baked clam stuffies, and a lobster roll. Non seafood options include a Texas Wagyu burger, steak frites, and a bone in pork chop.

The bar program centers on martinis, backed by a curated wine list, craft beer, and non alcoholic options.

A Restored East Austin Space

The restaurant is set inside a renovated 1950s craftsman home, with a horseshoe shaped bar built from the original longleaf pine and an open raw bar where guests can watch oysters being shucked. The space seats close to 100 guests across the dining room and patio.

Future plans include an outdoor herb garden and a wine garden where guests will be able to shuck their own oysters.
