Get ready, Austin! The city is about to get a fabulous dose of pink as Bucket Listers and Mattel bring the Malibu Barbie Cafe pop-up to town. Opening on April 4th at 610 N Interstate Hwy 35, this one-of-a-kind experience is set to dazzle with a retro beachside vibe, a roller rink, and an all-day dining menu inspired by the iconic Barbie brand.

A Dreamy Barbiecore Experience
After viral success in cities like New York, Chicago, Miami, Houston, and the Mall of America®, the Malibu Barbie™ Cafe is finally making its way to ATX. Created by Bucket Listers President of Experiences, Derek Berry — the mastermind behind pop-up sensations like Saved by the Max, The Golden Girls Kitchen, and The Family Guy Experience — this interactive dining adventure is a nostalgic celebration of 1970s Malibu Barbie™.
“Barbie has proven to be one of history’s ultimate icons, and it means so much to bring exclusive experiences like this to life for our community,” says Berry. “I cannot wait for the city to see what we have in store.”
Eat, Skate, and Play Like Barbie
The Malibu Barbie™ Cafe is more than just a restaurant — it’s a full-on experience. Guests can look forward to:
- A groovy roller rink worthy of Barbie herself
- A delicious fast-casual menu curated by Master Chef finalist and Chopped Champion Chef Becky Brown
- Delectable desserts and refreshing drinks
- Exclusive Barbie-themed merchandise
- Fun interactive activities like Cupcake Decorating Classes, Paint Parties, and 21+ Skate Nights
To add to the fun, each roller skate rental ($1) will be donated to Girls INC., making this a feel-good experience for a great cause.
How to Get Tickets
Tickets are $25 and include food and merch credit. They will be available exclusively through Bucket Listers, with a waitlist available to sign up for those who want first dibs. Tickets will go on sale starting Feburary 28th!
