When you think of recipes with peanut butter, you generally think of sweet treats or smoothies. While Fix & Fogg does have decadent dessert recipes (see Coffee & Maple Blondies), their nut butters are equally as delicious in savory dishes. From pesto, to hummus, soup and satay, read on to learn about how to turn peanut butter into the star of your table.
If you have a bunch of basil leftover from the herbs you planted during quarantine this summer, homemade pesto might be the best use for it. Kick it up a notch with Fix & Fogg’s Everything Butter, made with peanuts, almonds, flax seeds, chia seeds, pepitas, sunflower seeds and sesame seeds. It’s incredible on pasta, baked salmon or sourdough bread.
Ingredients:
Base:

2 cups packed basil leaves

1 cup packed coriander leaves

1/3 cup extra virgin olive oil

Zest and juice of a lemon

1 clove garlic finely chopped
-
½ tsp chili flakes
-
Big pinch of salt
-
½ cup grated parmesan
-
⅔ cup Everything Butter
Directions:

Place everything in a food processor (except the parmesan and Everything Butter) and blitz until combined

Pour into a bowl and stir through the parmesan and Everything Butter until well incorporated

Taste (no double dipping!) and season with extra salt if required

Top with extra olive oil and chilli flakes
- Serve with toasted sourdough, stirred through pasta or mix through roasted vegetables! If you don’t have any basil or coriander on hand you can substitute these for spinach, rocket or any other leafy green!
