Big changes are coming to 5th Street. The Westin Austin Downtown is closing out a decade of Stella San Jac and making room for a new coastal-inspired seafood spot, Skipjack Oyster. If oysters and crisp white wine sound like your thing, you’ll want to keep this one on your radar.
Before Skipjack takes over this fall, Stella San Jac is throwing one last party—and you’re invited. Starting May 1, the restaurant will serve a throwback Farewell Feast menu, highlighting guest favorites from the past ten years. You can run it back with 2015’s Lamb Meatballs, dive into the 2021 Seafood Mac N’ Cheese, or go all in on the 2023 Texas Blackened Redfish.


And if you’re a regular—or just feel like one—June comes with a bonus. Between June 1 and June 27, spend $100 at Stella and get a $20 gift card to Skipjack Oyster. Think of it as your early-access pass to what’s next.
It all wraps up on Friday, June 27 with a proper send-off: live music, bourbon tastings, and one final lineup of Stella’s greatest hits. After that, the team starts flipping the space for Skipjack Oyster, a raw bar-focused concept channeling the flavors of the Carolina coast. Expect daily oyster selections, casual seafood plates, and chef-driven entrees served in a polished but laid-back setting. You’ll also be able to pair it all with chilled whites or whatever’s coming out of the cocktail program.

The Westin itself is getting a full refresh, including all guest rooms, meeting areas, and the lobby. As downtown Austin continues to evolve, Skipjack is setting up to be part of that next wave.
Until then, Stella’s final season is your moment to revisit the dishes you loved—or finally try the ones you missed. Don’t sleep on the farewell party.
