Led by Executive Chef Tavel Bristol-Joseph, 2020 FOOD & WINE’s Best New Chef, Canje pays homage to Tavel’s Caribbean roots with a menu inspired by mainland Guyana and many of the islands in the region. Born and raised in Georgetown, Guyana, Bristol-Joseph highlights his family’s traditions in the kitchen, with cooking techniques, ingredients, and the many expressions of vibrant food from Jamaica to Puerto Rico.
The Menu
Designed by Rand Egbert, the space at Canje boasts a 100-seat dining room, along with a 24-seat private dining room. The menu includes dishes such as Wild Boar Pepper Pot with chili, orange peel, cinnamon, ginger, cassareep; Pan-Seared Snapper with coconut broth, cherry tomato, pickled okra, potato, and cilantro; Guyanese Style Roti; and Bone-In Jerk Chicken. Desserts will include Black Cake with cream cheese frosting; Ambrosia with spiked rum, seasonal fruit, and a fresh baked cookie.
Beverage Director Kate Houser leads to bar program, featuring a variety of cocktails including the Curry Wata with Canje-Curry Gin, Plantation 3 Star, Mango-Apple Chutney, Lemon, and Orange; Love Drug with Cacao-infused Mezcal, Cocchi Torino, Mauby Bark tincture, Frozen Pina Colada with Bacardi Superior, Plantation pineapple, coconut cream, and lime, and many more. A selection of beers and wine will also be available.
Canje is located in East Austin at 1914 E 6th St, and is open seven days a week Sunday-Wednesday 5:00pm-10:00pm and Thursday-Saturday 5:00pm-12:00am. Valet and complimentary parking is provided onsite.
