Bird Bird Biscuit will be opening their first ever location on Manor Rd. on Thursday, June 28, with a focus on fast casual and creative biscuit sandwiches created by co-founder and Chef Brian Batch, and co-owner of Thunderbird Coffee, Ryan McElroy.
Bird Bird Biscuit is the creation of Batch’s long-time obsession with sandwiches and his tours around the country with his band Alpha Rev. Often times, a quick sandwich was the only way to explore a city’s food culture. After quitting his band and starting full-time at Thunderbird Coffee, he made constant improvements to the panini menu, and eventually became the general manager of both Thunderbird locations and helped them establish a solid foundation with in the local community.
With the support of many Austin chef and restaurant owner friends, and a certain unnamed Austin Biscuit Whisperer, he has perfected a biscuit designed specifically for sandwiches, which will be served exclusively at Bird Bird Biscuit. Taking a few cues from the classic biscuit sandwiches of Nashville and the freshness of Los Angeles sandwich culture, Batch built a menu that is meant as a love letter to biscuits and to the Manor Road neighborhood.
“We are doing our very best every day to create a little biscuit sanctuary for Austin where you can come, have an amazing experience, and leave loving life,” says Batch.
Available for breakfast or lunch, the biscuit sandwich selection includes the Bird Bird Bacon (crispy bacon, organic egg over medium, cheddar, bacon-infused chipotle mayo) and vegetarian option Lush Life (made with fried eggplant, house-made pickled onions, fresh mozzarella, fresh basil, garlic tomato jam).
Bird Bird will also offer other specialities like, Dough-Doughs (biscuit doughnut holes tossed in cinnamon, sugar and a touch of salt), biscuits and jam, and sides like hash browns and house-pickled items. Beverages include Wild Gift Coffee, Mill-King milk, fresh orange juice and Maine Root soda.
Bird Bird Biscuit opens on June 28th and will be open Tuesday through Friday, from 7 a.m. to 3 p.m. and Saturday and Sunday, from 8 a.m. to 4 p.m.
