Red Ash Italia opens Downtown

The enterprising restaurateurs who created some of the most successful eateries in Central Texas and beyond are launching a new Italian restaurant in downtown Austin that showcases authentic cuisine from the many regions of Italy with integrity, seasonality and style. Red Ash, the new wood fired, craft Italian restaurant located at 303 Colorado St. in the Colorado Tower, led by Owner and Executive Chef John Carver, the former executive chef and partner of Eddie V’s, Wildfish and Roaring Fork,in collaboration with partners and restaurateurs Larry Foles and Guy Villavaso.

The star of the Red Ash kitchen is the custom-builtwood-burning grill, oven and plancha, from which red ash is released during the burning of wood, lending the restaurant its moniker, and providing the ideal heat source for preparing the restaurant’s fresh fish,shellfish and prime cuts of meat.  With a strong respect for the culinary traditions of Italy, Chef Carver plans to make true Italian dining accessible for Red Ash guests, providing a fresh, high-energy experience for every diner. Chef Carver insists on only high-quality seasonal ingredients when preparing his simple yet authentic Red Ash dishes, some of which are served in traditional family-style portions for sharing.

Red Ash is ideal for happy hour, family gatherings and memorable nights on the town and their variety of dining spaces makes the restaurant perfect for corporate events and private parties. Red Ash is also available for partial and full buyouts for special events.

 

The creation of prolific restaurateurs Executive Chef John Carver, Larry Foles and Guy Villavaso, the restaurant features a variety of authentic wood-fired Italian recipes highlighting fresh, seasonal ingredients and the best culinary traditions of the many regions of Italy, accompanied by an extensive international wine list and whimsical cocktail menu. Red Ash offers dinner service Sunday through Thursday from 5 to 10 p.m., and Friday and Saturday from 5 to 11 p.m. Happy hour is Monday through Friday from 430 to 6 p.m., featuring exclusive menu items, such as Red Ash’s cicchetti (traditional Italian small bites), along with wine-by-the-glass and cocktail specials.
