Meatless Monday | Wheatsville’s Popcorn Tofu Po’boy

Our meatless Monday kicks the week off with our latest addiction at Wheatsville Co-op. The infamous Popcorn Tofu Po’boy is comprised of magical crispy nuggets of tofu (possibly made with unicorn tears) on a bed of veggies seated in a homemade french roll topped with in-house, freshly made cashew tamari dressing.  If that is not a sandwich handcrafted with foodie passion, I don’t know what is.

 

Wheatsville is known nationwide for the cult classic known as Popcorn Tofu and has aided 20 other co-ops across the US in spreading the Popcorn Tofu love.  For those who have been in Austin long enough you might recall in the early 2000’s when this craze began.  The word got out on how delicious the Popcorn Tofu was and it would sell out by 3 PM daily, the vegetarian’s version of Franklin’s. Luckily the store was being remodeled giving way to a whole new kitchen that could keep up with the people’s demand.  

 

No matter where you fall on the food pyramid, as a greeny vegan or a carnivorous T-Rex, this savory sandwich will leave your taste buds satisfied and your belly happy.
