Being a Louisiana native, I know a thing or two about Cajun food. Crawfish étouffée is certainly my jam. I got to thinking about who I can take a regular mac n cheese recipe to the next level. I figured why not put two of my favorite dishes together?
1 lb. crawfish tails, fresh or thawed
1 stick unsalted butter
3 cups all-purpose flour
1 large onion, small dice
1 green bell pepper, small dice
4 stalks celery, small dice
4 cloves garlic, minced
2 bay leaves
1 tsp cayenne pepper
1 Tbsp Creole seasoning
1 package elbow noodles
