Emmer & Rye Hospitality Group has announced their latest concept set to open in fall 2021, Canje, a restaurant focused on Caribbean cuisine. The restaurant’s concept will be driven by Executive Chef Tavel Bristol-Joseph’s, Caribbean roots, with a menu inspired by mainland Guyana and many of the islands in the region.
“To me, Caribbean food represents a combination of different cultures: Indian, Portuguese, African, French… It is such a ‘cookup.’ Since moving to Austin, I have been craving this food, and it is exciting for me to have the opportunity to share my version of it. My grandmother is going to be proud,” said Bristol-Joseph.
The restaurant’s name refers to the Canje Pheasant, which is the national bird of Guyana. Chef Tavel was born and raised in Georgetown, Guyana and has always dreamed of opening a concept that represents his hometown and his family’s cooking traditions, regional ingredients, and techniques.
