Today is the first annual National Panini Day, and we’re getting our grub on with the famous Italian sandwich at some of our favorite spots in Austin. Panini’s are said to have originated in Lombardy, Italy, in response to the demand among Milanese office workers for a quick lunch without sacrifice in flavor and quality. The sandwich supposedly made its first appearance in the U.S. as a ‘pan warmed Italian sandwich’ in 1956 an Italian street fair on the east coast.
