COVER 3 To Hosts Zinni Brothers Wine and Dine Dinner on October 9th.

On Wednesday, October 9th at 6:30 p.m., COVER 3 on Anderson Lane, will host brothers Mike Zinni of Kobrand Wines and Dave Zinni of Rombauer Vineyards for a special wine dinner – “The Zinni Wine and Dine” – at its original location on Anderson Lane in North Austin.  Mr. Zinni will hand-select three wines from Kobrand Wines while Dave will hand-select three from Rombauer Vineyards, which will be served alongside six complementary courses prepared by COVER 3’s Executive Chef Justin Manzi in addition to thoughtful conversation about each varietal selection.

The six-course menu features:

  • Course One:

    •  Rombauer Sauvignon Blanc | Napa Valley

    • Trio of Salmon (prepared raw, cured and smoked)

  • Course Two:

    • Cakebread Chardonnay | Napa Valley

    • Butternut Squash Risotto (with roasted quail, grain mustard, brandy, chive honey and shallot candy)

  • Course Three

    • Rombauer Chardonnay | Napa Valley

    • Foie Gras and Chicken Liver Mousse (with golden beets, heirloom carrots, truffle balsamic glaze, apple cider reduction and crostini)

  • Course Four:

    • Cakebread Merlot | Napa Valley

    • Lasagna made (with fresh pasta, homemade pork sausage, pecans, fontina, parmesan tuille, maple ricotta, carrot sage puree and basil oil)

  • Course Five:

    • Rombauer Cabernet Sauvignon | Napa Valley

    • Prime NY Strip Surf and Turf (with bacon-wrapped shrimp, sour cream and onion duchess potato, cippolini onion jam, creamed spinach hollandaise, and brandied foie gras demi)

  • Dessert:

    • Belle de Brillet Pear Brandy

    • Pumpkin Pie Tart (with dulce de leche whipped cream cheese, pear compote and cinnamon blueberry crumb)
