Juliet announced today that Robert Millican has joined Executive Chef Jacob Weaver, Chef de Cuisine Brandon Fuller and Pastry Chef Carly Rossimessel as the Beverage Program Director. Millican, the co-founder of acclaimed Firehouse Lounge, has designed a beverage program that combines traditional Italian flavors with unique twists, including a family of Negroni cocktails and seasonally influenced classics. Juliet’s wine selection will include over 150 wines and will focus on Italian labels as well as new and old world favorites.  In addition to our regular list of wines by the glass, we will also feature a rotating selection of higher-end wines using a special preservation system, giving our guests the ability to enjoy a glass of wine that is usually only available by the bottle. The beer selection shines as well with a quality selection of local drafts on tap in addition to special releases from local Austin craft brewers.

“This is really a dream team and I am thrilled to be a part of it,” comments Millican.  “Guests can expect traditional Italian wines but also interesting European influences to cocktails.”

“It’s been fun to collaborate with Robert in developing our beverage program to be complimentary with our menu,” notes Chef Weaver. “It is important to us that all of the components of Juliet are in harmony. I am happy to say Robert is the perfect counterpart to make that a reality.”

Armed with degrees in biochemistry and business management and fourteen years of experience in the beverage industry, Millican has held a variety of positions that extend far past the bar, including management, marketing and consulting. Millican holds a first level Sommelier Certification, wine specialist certification and tequilier certification.

Millican recently held positions as General Manager and Beverage Director for Vulcan Gas Company in Austin, Texas and Monument Restaurant Group in Georgetown, Texas. He’s consulted at various bars including Vulcan Gas Company, designing bar infrastructure and equipment layout at Esquire Tavern and Drew’s American Grill, all in San Antonio, Texas.  In 2011, Millican relocated to Austin to launch his own concept, Firehouse Lounge, where he developed all bar operations and trained the staff on all principles of mixology.
