Most of us have a large amount of Holiday leftovers and have had our share of turkey sandwiches, so why not put a fresh spin on the leftover bird! PhoNatics owner Pat Lee has given a simple and delicious suggestion to make a healthy Vietnamese alternative, Turkey Pho.turkeyphoIngredients that you will need:

4     Cups of broth

½ lb leftover Thanksgiving turkey

1      teaspoon lemongrass

1 teaspoon cinnamon

1     fish oil (soy sauce works too!)

¼ lb egg or rice noodles

1     teaspoon minced chili peppers

¼ cup bean sprouts Bean sprouts

1 cup leftover veggies of your choice

Sriracha hot sauce (optional)

Bring broth, veggies, turkey, noodles, spices and fish oil to a boil for 10 minutes or until the noodles are al dente. Serve piping hot

Cooking tips:
-Don’t overcook the noodles, they will further cook in the broth
-Always add spices such as lemongrass, star anise and cinnamon
-If you’re making your own broth, it’s always best to make your it a day or two before so it has more flavor- perfect for leftovers!
