Uchiko is excited to announce that Sterling Ridings, former sous chef at Uchi, is now acting as Chef de Cuisine.

Originally from Boerne, Texas, Ridings received his first taste of the restaurant world by washing dishes at an Italian restaurant. Inspired by the inner workings of kitchens, Ridings attended the Texas Culinary Academy in Austin.  During his time there, his talents were recognized by Chefs Philip Speer and Paul Qui, which lead to a regular stage at Uchi two days a week.  Following his graduation in 2007, Ridings took a full time position as a cook at Chef Shawn Cirkiel’s acclaimed restaurant Parkside.  From there, Ridings assisted in the opening of Foreign & Domestic in 2009 and considers Chef Ned Elliot a mentor to this day.

UchikoIn 2010, Ridings joined the Uchiko team and four years later has now worked his way up to Chef de Cuisine. He credits Tyson Cole and Shawn Cirkiel for much of his culinary success. In his role at Uchiko, Ridings is able to fuse his passion for creative dishes with Japanese fare.
