On Sunday, February 28, 12 of the region’s finest chefs will gather at Barr Mansion in Austin, Texas, for the American Lamb Jam Global Flavors Tour. This is the annual multi-city culinary cook-off’s second visit to Austin where event attendees and food media will decide who has earned their “chops” by voting on the chef’s inventive American lamb dishes.
Some of Austin’s most talented chefs will create their own signature lamb dishes with an arsenal of unique flavors and spices from their very own kitchen. Attendees are thrilled to see what the chefs have planned for everyone, and while we haven’t seen what else is on the menu other than lamb, there’s no reason we can’t enjoy a few amazing recipes to warm up our appetites before the big event.
1 rack of American lamb with 8 ribs, excess fat trimmed but a thin layer still intact, and bones frenched by the butcher
Salt and freshly ground pepper

2 medium oranges
1 cup fresh parsley leaves
1/3 cup pitted black olives, such as Kalamatas, cut lengthwise into slivers
