The beverage director for all parkside projects restaurants in Austin — elevated gastro pub parkside, family-style Southern Italian eatery olive & june, Neapolitan-style pizzeria the backspace and new tapas restaurant Bullfight — has earned a rare distinction in the world of fine wine. Paul Ozbirn, the wine and beverage director for parkside projects, has been designated an advanced sommelier after completing and excelling at the advanced sommelier exam through the prestigious Court of Master Sommeliers. An extremely rare designation, this advanced sommelier distinction is one only a handful of Austin wine experts hold.

Originally from Nashville, Tenn., and calling Austin home for nearly a decade now, Ozbirn credits his initial interest in wine to a months-long post-college journey throughout Italy and Greece. He later honed his wine knowledge while waiting tables at Austin’s Vin Bistro and Botticelli’s South Congress, experiences that led him to earn his Level 1 sommelier distinction. Later, while working as part of the wine staff at fine-dining restaurant Wink, Ozbirn became a certified sommelier, and took the job of Wink’s wine buyer and in-house sommelier. He later continued to share his wine knowledge with Austin foodies while working as the sommelier at Paggi House.

But it was Ozbirn’s move to Chef Shawn Cirkiel’s olive & june Italian restaurant that propelled his career to new heights. Initially hired as the wine and beverage director at olive & june, Ozbirn worked diligently to craft a unique and beloved wine program for the Italian eatery. Soon after, Chef Cirkiel soon named Ozbirn beverage director for all parkside projects restaurants.

With his new designation of advanced sommelier, Ozbirn will continue to develop and elevate the wine and beverage programs at all parkside projects restaurants while sharing his vast wine and pairing knowledge with engaged diners.
