Nowadays sandwiches are constantly parodied by silly Subway commercials and occasionally overlooked in exchange for low-carb fusions and lunchbox flavors of the week at the local market.  I have absolutely nothing against other options, but I’m fairly confident that the very creation of the sandwich itself is solely responsible for the historic and romantic appeal of bread and meat coming together in harmony.  Noble Sandwich Co. has successfully redefined the mass-commercial buffoonery of a sandwich business in to an appreciation for the authentic art of a chef crafted, cure the meat in-house, sit-down sandwich restaurant with profound results.

Noble Sandwich Co. Burnet Rd.

Chefs John Bates and Brandon Martinez opened Noble Sandwich Co. in September 2010 which a philosophy of bringing in a unique culinary experience to sandwich making.  However since opening the restaurant it’s become much more than a take a number at the counter, wait in line sandwich shop, it’s become a local icon.  Bates and Martinez have moved beyond pre-packaged deli meats. Expect to find mouthwatering options such as Seared Beef Tongue, Duck Pastrami and Smoked Pork Belly as well as many other chef driven, house-cured meats on the menu.

From the scratch made bread to the house cured meats, Noble produces 95% of everything in-house. Bates and Martinez have created a menu where gourmet style cuisine can be delicious and affordable without costing you an entire weekend’s worth of cash.  Most menu items are below $10, such as the Smoked Duck Pastrami Sandwich with Russian dressing and house made rye pickles ($9.23); the Knuckle Sandwich ($8.75); and The Noble Pig ($8.50) the restaurant’s namesake, stacked with house cured meats like spicy ham, pulled pork, provolone, spicy mustard, mayonnaise and bacon.

Noble Sandwich is no longer just a lunch destination anymore, they also serve a breakfast, lunch and dinner menu with the same standards for using high-quality ingredients with carefully selected local and sustainable items.

In 2012, Noble Sandwich Co. reached superstar-dome when they appeared on the Food Network’s Diners, Drive-ins and Dives with Guy Fieri, instantly boosting them to world-wide fame. Since then, they’ve never looked back and have continued to grow, opening a 2nd location on Burnet Rd just a couple of years later.
