Today is National Fried Chicken Day! We honor a classic American dish, or in this case, a crispy bird! Deep fried chicken has its American roots in the Southern states, but Europeans have been eating fried chicken since the middle ages when cooks realized that coating chicken in flour and spices before cooking it helped seal in the flavor and made it easier to eat on-the-go. They probably also realized it was absolutely delicious!
