Malaga Tapas & Bar is pleased to announce the debut of their new menu created by recently hired executive chef, Mario Medina. This will be Malaga’s first major menu overhaul since the restaurant opened in 1999. Located in the heart of the vibrant 2nd Street District, Malaga Tapas & Bar offers a wide variety of Spanish tapas and other Spanish influenced dishes.

“I am extremely excited to lead the kitchen at Malaga, where I have the opportunity to create a menu that reflects my passion for food and quality ingredients. A new focus of ours will be a dedication to finding quality, locally sourced ingredients,” says Executive Chef Mario Medina.

After graduating from The Art Institute of California with a degree in culinary arts, Medina spent several years in California and Las Vegas working with notable chefs like Charlie Palmer, Jose Andres, Huber Keller, Michael Mina, and Gordon Ramsay. In August 2012, Medina followed his dream of living in Austin by accepting the sous chef position at Shawn Cirkiel’s Parkside. Cirkiel then recruited Medina to join the team at Chavez as chef de cuisine for the restaurant’s launch. In August 2014, Medina joined the Malaga team where he has developed an exciting new menu created by his own inspiration and creativity.

Malaga’s new menu focuses on high-quality and locally sourced ingredients from Austin-based purveyors like Farm to Table and Johnson’s Backyard Garden. New menu highlights include carnes y queso (Serrano ham, Spanish chorizo, idizabal, manchego, mahon), datiles con tocino (dates, Niman bacon, almonds, blue cheese), fritura de pescado (branzino, house aioli, mojo verde), carne asada (Malaga strip, mojo rojo, cipollini onions), and more. Malaga’s wine menu features over 150 carefully selected Spanish wines designed to pair perfectly with their selection of tapas.
