Garbo’s Fresh Maine Lobster is thrilled to announce that culinary duo Chef Mario Fortuna and Pastry Chef Alexandra Lee have joined the brick and mortar restaurant team as executive chef and pastry chef respectively.

“We are so excited to have Mario and Alexandra join the Garbo’s team,” says Heidi Garbo, owner of Garbo’s Fresh Maine Lobster. “They bring an incredible amount of experience and skill to the restaurant and are so innovative in the kitchen.”

Fortuna, of Brooklyn, New York, began his culinary adventures as a cook at age sixteen. In 2007, Fortuna graduated from the French Culinary Institute and then began his culinary career with Steven Starr Company, where he worked at Buddakan and Steven Starr Events.

After his work with Steven Starr Company, Fortuna expanded his culinary experience as a sous chef at La Grenouille for four years. At this time, he also met Alexandra Lee with whom he has cooked ever since his work at Le Grenouille. Fortuna and Lee both played a big role in the opening of Mu Ramen in New York in 2014 and prior to becoming executive chef at Garbo’s, Fortuna worked at Kaiteki Ramen in Oklahoma City.


Born in El Paso, Texas, Lee moved to New York in 2005 to explore her culinary talents and attended the Institute of Culinary Education. Lee began working at a small French restaurant, where she met Fortuna and, after a few years, made the switch from sweet to savory at La Grenouille. Years later when she arrived in Austin with Fortuna, Lee made the switch back to her roots and is now the pastry chef at Garbo’s, where she is creating unique and palate-pleasing desserts, including the popular Whoopie Pies.

Garbo’s Fresh Maine Lobster proudly serves New England cuisine with an Austin twist. Owned by Heidi Garbo, Garbo’s began in Austin, Texas as a food truck in 2013 and in 2014, established a brick and mortar at 14735 Bratton Lane.
