The Carillon is excited to  be offering a special 3-course for $35 dinner menu to celebrate summer, available now through the end of August. The menu continues the restaurant’s focus on new American cuisines inspired by Texas flavors, made with Texas ingredients.

For $35, guests will get a choice of appetizer, entrée – with three options available for a $10 upgrade – and dessert from the following:

Appetizers:

  • Roasted Celeriac Soup served with croutons, house bacon lardon, grilled leek, and harissa
  • Tomato Salad with heirloom tomatoes, buratta, aged balsamic, basil, and smoked pine nuts
  • Spring Greens Salad made with baby lettuce, berry vinaigrette, goat feta, toasted pecans, and local garden vegetables
  • Charred Corn Fritters with tomatillo jam, pilsner aioli, and cilantro

Main:

  • Parisian Gnocchi with fennel, oyster mushrooms, carrots, watercress, and beurre blanc
  • Chicken Fried Quail with cabbage, jalapeno, apple, sorghum, and celery seed
  • Smoked Pork Chop made with Berkshire pork, apple fennel mostarda, cherry puree, and polenta
  • Seared Chilean Sea Bass (+$10) served with sunchoke puree, roasted cauliflower, and grapefruit gastrique
  • Rack of Lamb (+$10) served with Israeli couscous, eggplant, artichoke, oregano, and black garlic tahini
  • Grilled NY Strip (+$10) served with crispy potatoes, creamed arugula, chives, and paprika oil

Dessert:

  • Sticky Toffee Pudding with fig coulis, vanilla ice cream, and cookie
  • Ginger Vanilla Cheesecake with balsamic strawberries, red wine gelee, and peppermint chocolate
